Why Am I Reacting to More and More Foods?

Many people reach a point where it feels like their list of problem foods keeps growing.


A food that never used to bother them suddenly causes symptoms.


Then another food starts causing issues.


And then another.


Before long, it can feel as though almost everything you eat is making you feel worse.


This can be incredibly frustrating.


It's also one of the most common reasons people start removing more and more foods from their diet.


But here's the interesting thing: In many cases, the problem isn't that you've suddenly become sensitive to every food you're eating.


More often, something has changed in your body that has reduced your tolerance, meaning it now takes less to trigger symptoms.

Is it really the food?


When symptoms start appearing after more foods, it's natural to assume that each food is a new problem.


Sometimes that's true.


But often, the bigger question is: Why has my body become more reactive in the first place?


Rather than looking only at the foods themselves, it can be helpful to step back and ask:

  • Has my stress increased?

  • Am I sleeping poorly?

  • Have I been unwell recently?

  • Has my digestion changed?

  • What have my hormones been doing?

  • Am I feeling more run down than usual?


These questions often provide far more clues than the foods alone.




Understanding tolerance thresholds


Most people can get away with a certain amount before symptoms begin to appear.


This might be a particular food, a combination of foods, or several different stressors accumulating at the same time.


Think of it like a line.


As long as you stay below that line, your body generally copes reasonably well. Once you cross that line, symptoms begin to appear.


That line is what I call your tolerance threshold.


The important thing to understand is that this threshold isn't fixed.


When you're sleeping well, recovering well, managing stress, digesting effectively, and generally feeling healthy and resilient, your body can usually tolerate more before symptoms appear.


During periods of illness, poor sleep, chronic stress, hormonal changes, inflammation, digestive dysfunction, or other challenges, it takes much less to exceed that threshold and trigger symptoms.


This is one reason food reactions can feel so inconsistent.


The food may not have changed. What has changed is the amount your body can comfortably tolerate before symptoms begin to appear.




Why does this happen?


There usually isn't one single reason.


More often, several things are happening at the same time.


This is why simply removing another food doesn't always solve the problem.


If your body's tolerance has reduced, it's worth looking at what else may have changed around the same time.

 



Stress and the nervous system


Stress affects far more than mood.


When the brain perceives that you're under threat, it shifts resources away from functions that are not essential for immediate survival and towards helping you respond to that threat.


From a survival perspective, this makes sense.


If you're running away from danger, your body isn't prioritising digestion, reproduction, or long-term repair. It's prioritising keeping you alive.


This is why stress can have such a direct impact on the digestive system.


Many people notice changes such as:

  • butterflies in the stomach

  • reflux or indigestion

  • nausea

  • appetite changes

  • bowel urgency

  • loose stools

  • constipation

  • needing to urinate more frequently


These changes can happen surprisingly quickly.


However, when stress becomes chronic, the effects often extend far beyond temporary symptoms.


Repeatedly shifting resources away from digestion can begin to alter how the digestive system functions over time.


Food may not be broken down as effectively, nutrient absorption may become less efficient, and changes can occur in gut motility, digestive secretions, inflammation, and the balance of bacteria living within the gut.


Because every stage of digestion relies on the stage before it, these changes can have a flow-on effect throughout the rest of the digestive tract.


Over time you may notice:

  • bloating becoming more frequent

  • increased fermentation, contributing to bloating and gas

  • changes in bowel habits

  • shifts in the balance of gut bacteria

  • foods that were previously well tolerated beginning to trigger symptoms


This is one reason I often see digestive symptoms begin—or existing symptoms become much worse—during periods of ongoing stress, even when the diet itself hasn't changed.

 



Digestive function


Stress is only one factor that can affect digestion.


Changes in stomach acid, digestive enzymes, bile flow, gut motility, medications, illness, ageing, and the balance of bacteria within the gut can all influence how well food is broken down and processed.


When digestion isn't functioning optimally, foods that were previously well tolerated may start producing symptoms—not necessarily because the food has changed, but because your body's ability to process it has changed.


 



Gut barrier and immune activation


Your digestive tract does more than simply digest food.


In many ways, it acts as a barrier between the outside world and the inside of your body.


Food may travel through your digestive system, but it isn't truly "inside" the body until it passes through the gut barrier and is absorbed.


This barrier plays an important role in deciding what gets through and what stays out.


At the same time, a large proportion of the immune system sits in and around the digestive tract, constantly monitoring what is passing through.


When the gut barrier becomes irritated or inflamed, the immune system can become more reactive.


This can contribute to food sensitivities becoming easier to trigger, but the effects are not always limited to digestion.


I often think of it as creating a ripple effect throughout the body.


Most people have areas where their body tends to be more vulnerable.


For some people it may be eczema. For others it may be asthma, allergies, arthritis, migraines, autoimmune conditions, sinus issues, or something else entirely.


When immune activity increases, these existing tendencies often become more noticeable.


One way I explain this is by thinking about the immune system responses like two different dogs.


One dog sits calmly on the veranda watching people walk past. The other runs up and down the fence barking at every little thing that goes by.


Both dogs are trying to do the same job, but one reacts to almost everything while the other responds only when there's a genuine threat.


When the immune system becomes irritated or overstimulated, it may start reacting more strongly than necessary and symptoms become easier to trigger.


This doesn't mean it is "bad" or that it should stop responding altogether. Rather, it means it may need support to become less reactive and more selective about what it responds to.


This is one reason improving gut health can sometimes lead to improvements that extend well beyond digestion alone.




Cumulative load


One of the biggest misconceptions about food reactions is that symptoms are always caused by a single food.


Often that's not what I see in practice.


More commonly, several different stressors are building up at the same time until the body reaches a point where it can no longer compensate as effectively.


This might include:

  • poor sleep

  • stress

  • illness

  • hormonal changes

  • environmental exposures

  • digestive issues

  • repeated food triggers


Each factor may seem relatively small on its own.


But when enough of them occur together, symptoms can become much easier to trigger.


This is one reason people often feel as though they are suddenly reacting to more and more foods.


The food may simply be the final thing that pushes you beyond your current tolerance threshold, rather than the whole reason you're experiencing symptoms.




Histamine and food chemicals

 

For some people, reactions aren't only influenced by foods themselves but also by naturally occurring food chemicals.

 

Histamine is probably the best-known example, but naturally occurring food chemicals such as salicylates, amines, glutamates, oxalates, and sulphur-containing compounds can also contribute to symptoms in susceptible individuals.


The body is constantly processing and clearing these compounds.

 

When everything is functioning well, they may cause little or no issue.

 

However, factors such as stress, illness, inflammation, hormonal changes, poor sleep, digestive dysfunction, and overall health can influence how efficiently they are handled.

 

As a result, foods that were previously well tolerated may begin triggering symptoms, even though the foods themselves haven't changed.


Those symptoms don't always appear immediately either, which can make it even harder to recognise the true trigger.


This can create the impression that you're suddenly reacting to more and more foods, when the bigger change may actually be your current tolerance rather than the foods themselves.




Why symptoms often start as whispers


One of the most common patterns I see is that symptoms rarely appear out of nowhere.


Usually there is a period where the body starts providing smaller clues first.


These may include:

  • mild bloating

  • fatigue

  • brain fog

  • increased congestion

  • headaches

  • itchiness

  • disrupted sleep

  • feeling generally "off"


These signs are easy to dismiss because they often seem minor at the time.

But they can be valuable clues that you're getting closer to your current tolerance threshold.


For many people, the body whispers before it shouts.


Learning to recognise those earlier signals can make it much easier to respond before symptoms become more significant.




What should you do if you're reacting to more foods?


The natural response is often to start removing more foods.

Sometimes temporary restriction can be helpful.


But continually removing foods without understanding why symptoms are occurring can create new problems of its own.


The more foods that are removed, the harder it can become to maintain variety, meet nutritional needs, and enjoy eating.


Rather than immediately asking: "What else do I need to avoid?"


It can be more helpful to ask: "What changed around the time this started?"

  • Stress?

  • Illness?

  • Hormonal changes?

  • Medication?

  • Antibiotics?

  • Major life events?

  • Sleep disruption?


Looking for these patterns often provides more useful information than simply continuing to remove foods from your diet.


This often leads to a much more useful investigation.




A more structured way forward


If it feels like your list of problem foods is growing, try not to focus only on the foods themselves.


The bigger clues are often found in the patterns surrounding the reactions.


When did symptoms become worse?


What else was happening at the time?


Were there changes in stress, sleep, illness, digestion, hormones, or lifestyle?


Tracking symptoms, recognising early warning signs, and understanding your own patterns can often provide more useful information than simply creating a longer list of foods to avoid.

Reacting to more and more foods doesn't necessarily mean your body is becoming permanently intolerant to everything you eat.


More often, it suggests that something has changed in the way your body is coping, recovering, or tolerating the demands being placed upon it.


When this happens, it's easy to assume the answer is simply to avoid more foods.


While temporary dietary changes can sometimes be helpful, long-term progress usually comes from understanding why your tolerance has changed in the first place.


By identifying the factors that may be lowering your tolerance threshold, you can begin supporting your body, rebuilding resilience, and working towards the broadest, least restrictive way of eating that still allows you to feel your best.


As your body becomes more resilient, reintroducing foods helps you understand which foods—and how much of those foods—you can comfortably tolerate again.


Because sometimes the most important question isn't: "What food caused this?"


It's: "Why has my body become more reactive in the first place?"
